Toffee Popcorn
Does anyone have a toffee recipe for making toffee popcorn, not caramel corn? There used to be a microwave version on the market but was discontinued a long time ago and I really miss toffee corn.
Thanks

Peaches and Cream Cookies
Found this today on the Food Network. I am going to make these as soon as I get dried peaches. There is a similar recipe using dried cherries, that I made last year. But the peach variation sounded really good. Maybe some of you will want to try these too!
Peaches and Cream Cookies
Recipe courtesy Sunny Anderson, 2008
3/4 cup all-purpose flour
1/2 teaspoon baking soda
Pinch salt
1 stick butter, softened
1/4 cup light brown sugar
1/4 cup dark brown sugar
1/4 cup sugar
1 large egg
1 1/2 cups rolled oats
1/2 cup chopped dried peaches
1/2 cup chopped walnuts
1/2 cup white chocolate chips
Preheat oven to 350 degrees F with the racks in the upper and lower thirds of the oven.
In a small bowl, whisk together flour, baking soda, and salt. In a stand mixer fitted with the paddle attachment, cream butter and sugars until light and fluffy. Slowly add egg and continue mixing. Slowly add flour mixture, oats, peaches, walnuts, and white chocolate chips. Mix until combined.
Line 2 sheet trays with parchment. With wet hands make 20 balls from the dough placing evenly among sheet trays. Press down on cookie dough with palm of your hand to make a flat circle.
Bake for 10 to 12 minutes or until golden and still a bit tender in the center. Remove from oven and let sit on sheet trays 1 minute. Remove to cooling racks to cool completely.

Summer is over
Summer is over I just got home from the hospital and am rehabbing my right knee(total replacement)Did the left in May. I should finally be able to be a better member or at least more active. I had a great summer getting to know my Big Green Egg. I always forget to take photos when I'm cooking but I will try.
I am giving myself a challenge because even though I can cook I don't bake as well as I would like. So I bought Martha Stewart's Cookies and I am going to make every recipe in the book by following the recipe. No doubling or adding stuff I think would be good. (I love Martha s cookies)175 recipes and I've made 10 so far. This has been fun for the kids because they get to choose and they have stretch beyond chocolate chip.

Split Pea Soup Day
I smoked a picnic ham over the weekend and put the leftovers in the freezer. Its time to make pea soup.
1 package of dried split peas
1 or 2 carrots, diced
1 med. onion, diced
smoked ham, diced
salt & pepper
water
put everything in a large saucepan and simmer...simmer...simmer until peas are tender. I like to smooth the soup out using a handed blender. Serve.
How easy is that?
Note: for a richer soup add a little cream.
