Brisket
I smoked a brisket last weekend using the boil and then smoke method. The brisket went into the pot and boiled for about 2 hours. One observation was that it curled up because of the fat on the top side. So from an appearance standpoint it was strange.
Dried it off real well and applied a decent layer of rub. Into the smoker for 4 hours.
The brisket turned out very tender and well seasoned. My verdict, a good method but the appearence takes some getting used too. Of course once it's cut up that issue disappears :^)
