Brisket

I smoked a brisket last weekend using the boil and then smoke method. The brisket went into the pot and boiled for about 2 hours. One observation was that it curled up because of the fat on the top side. So from an appearance standpoint it was strange.

Dried it off real well and applied a decent layer of rub. Into the smoker for 4 hours.

The brisket turned out very tender and well seasoned. My verdict, a good method but the appearence takes some getting used too. Of course once it's cut up that issue disappears :^)

Hey Mass,
Glad you had success with that brisket. I'm not a big fan of boiling meat. I find that it takes the natural flavor of the meat and leaves it in the pot. I know that it speeds up th process, but I've found that speed is an enemy of excellence. The all nighter is a pain, but it produces some mighty tasty meat.

Mass:~ Try boilling it with some " BUD "
in your pot sometime--^ you can also use For RIB'S 2...I Never cook or Boil.

mass,
my hat is still off to you. a flat is a dog of a piece of meat to do and i will only do one in an emergency. but you know just thinking about it you are half way home to turning out a killer pastrami. just cure the flat like corned beef and boil it like you already do. dry it off like you are doing and nail it with coarse grind black pepper and smoke it like you already do. bingo you gots pastrami!!!!
