COLLARD GREENS

Paddrick mentioned collards in his post, a green dear to my heart..here is the Vinny version of collards;

2 bunches collards-stemmed and chopped
2 carrots sliced
1 onion diced
1 tbs olive oil
2 cans chicken broth
1 smoked ham shank
2 tbs balsamic vinegar
salt and pepper to taste
in a lg sauce pan heat olive oil
add onion, carrots cook 2 minutes
add collards cook down
add ham shank and chicken broth bring to boil.
lower heat to simmer.
add balsamic vinegar-simmer 2-3 hours
salt and pepper to taste...

i make this in big batches and freeze some in quart containers.

Hi Vinny,
This looks like a great recipe but can you substitute bacon or smoked turkey if you don't have the ham shank? My son loved the greens a co-worker made and I have been looking for a good recipe to make for him and this one looks perfect. Thanks

Hi trigress, you can add whatever you like. you want to get a smokey flavor to the greens.
