PEKING DUCK
Convert this recipe to the grill and you will have the best tasting duck ever.
ive made this in the oven many times and im always amased at the color and flavor the cooked duck has.
this may seem like a lot of prep, but well worth it.
5-5 1/2 pound duck. mostly frozen in supermarkets, thaw in frig. then pat dry with paper towels.
place duck on rack in baking pan and put in frig. uncovered for 3-4 days.
day before cooking:
3 granny smith apples cubed. no need to peel.
1 box raisens
1 cup sugar
sweet and sour sauce. if you go to a chinese restruant buy a cup of their sweet and sour sauce or order carry out and ask for a cup.
in a bowl mix apples, raisens and sugar, cover and refrigerate over night. you will notice the next day a good amount of syrup will form in the bottom of the bowl.DO NOT DISCARD.
stuff duck with apple-raisen mixture.
pour syrup from bowl over duck.
salt and pepper duck.
put 3-4 cups water in bottom of pan.
bake at 350 for 30 minutes.
remove duck and coat with sweet and sour sauce and bake for 30 minutes longer.
duck will be a beautiful golden brown. put duck on platter and remove stuffing, and discard it. let duck rest.
strain drippings. put in small sauce pan and put it in the freezer or skim as much fat as possible.
mix drippings with 2 envelopes chicken gravy mix and heat to thicken.
carve duck and serve gravy on the side.
you will not believe the flavor that you have created!
