I smell smoke!
Today was jerky making day, yippee! Ya so I cheated a little and took the cowards way out but the results are delicious!
Bought a 2lb roast yesterday and had the butcher cut it into 1/4" slices for me, boy can that man use a knife.
Marinaded the meat in teriyaki sauce, garlic, black pepper and course salt for 24hrs in the fridge. Beat it to death with the meat hammer to thin it out nicely :^)
Put the smoker on and held the temp between 140-160f, low and slow. Four hours of hickory smoke.
It was tough keeping the temp low today because it was 95f.
Wow, the stuff is awesome! It won't last 15 minutes, that is going to be a problem! It is tender and not tough, but well dried out.
This is going to be a fun food to play with because the possibilities for flavoring are endless.
And yep you could do this in an oven quite easily as Vinny pointed out.
