Cornish Game Hens

Anybody ever smoked Cornish game hens? I have done them on a grill, in-direct method, but never in a smoker. Should I treat them just like miniature chickens :^)

All cornish gamehen's are just imature chicken that the farmer culled after sexing.
I suppose you could brine them a bit before going into the smoker if you intend to give them an indurance run through the smoker, but if you intend to use the smoker as an oven, I don't think you will have much of a problem.
Check them often, they cook fast.

i used to make them in the oven..they would be great smoked, but do cook faster the a chicken..if you smoke some let me know how they turn out.

back on line after the labor day lightening storm. only cost me one modem (rest of the computer was plugged into a ups and it worked!!!), two 12,000 btu window a/c units and then last saturday i lost a circuit breaker in the rig (any advice on replacing that would be appreciated)
ok now on to the game hens
mass since you seem to get called upon to do the big events this recipe works like a dream!!!!!!! and it is for 50 servings so file it away!!!!
bajan game hens- yield 50 servings
rub
25 garlic cloves
6 T. ginger,fresh,minced
17 ea. shallots,minced
5 ea. scotch bonnets,seeded and minced
33 ea. green onion chopped
8 c. italian parsley,chopped
4 c. cilantro,chopped
3 T. thyme,fresh,chopped
1 T. allspice,ground
5 oz. lime juice (fresh key lime is best)
1 lb. butter,salted
tt kosher salt
tt black pepper,fresh ground
50 ea. game hens

method--
1-puree first 8 ingredients
2- work in the next 5 ingredients to produce a soft paste
3-work fingers under the skin of the hen to loosen
4-insert paste between the skin and meat. use your hands on top of the skin to make the paste spread evenly.
5-spread remaining paste over the skin of the hens.

cooking time
1- in a 350f oven time will be 30 to 40 mins
2- in a 225f smoker time will be 60 to 90 mins approximately. orange wood is best for this however pecan and a little sugar maple would be good also.

hope it gives you some ideas. might be good at the races!!!!!!

ps. i served this with coconut rice. just take normal rice and add one cup of toasted coconut to it. go with the standard 2 cups of water to one cup of rice and add 1/2 cup of coconut milk. cover it up after it boils,kill your heat way back and it should be done in about 20 to 25 mins.
