Iron Chef Recipe

Portobello Parmesan
Ingrediants
6-Portobello mushrooms
11/2-cups marinara sauce (store bought or your favorite)
1-cup mozzarella cheese
1/2-cup fresh grated parmesan cheese
3-Tbs butter
Salt & pepper to taste

Remove stems and fins from mushrooms. ( I use a spoon to scoop out the fins). Brush the mushrooms generously with extra virgin olive oil.
Brush your indoor or outdoor grill with olive oil. Salt & pepper your mushrooms. Grill the mushrooms on a medium hot grille for about 4 mins. on each side. Preheat the oven to 400 degrees.

Using half of the marinara sauce cover the bottom of a baking dish large enough to accomidate the mushrooms. Place mushrooms in the pan bottom side up. spoon marinara sauce into each mushroom. Sprinkle generously with parmesan cheese. (reserve some to top it off).
Cover with mozzarella cheese and sprinkle on more parmesan cheese.
Dot each mushroom with butter. Bake until cheese is melted and slightly browned. (about 10-12 mins.)
